TASTE THE COTE D'AZUR 

 

Cuisine Nicoise’ is not typical of the rest of France, Nice has its own unique flavours, combining tastes and influences from neighbouring regions of Provence, Liguria & Piedmont, as well as Mediterranean flavours from further afield!  

Specialities of the region include:

 

Pissaladière - This is the 'pizza' of the South of France, a real gem and the perfect pre dinner snack, topped with caramelised sweet onions, anchovies and olives.  This is a melt in the mouth dish that puts a smile on everyones face. 

Socca - A large chickpea pancake, it doesn't get more street food than this, traditionally cooked in wood ovens on copper disks, roughly cut and served hot or warm wrapped in paper! 

Salade Niçoise - Infamous throughout the world, this salad is simply delicious, made with tomatoes, hard-boiled eggs, Niçoise olives anchovies & tuna, dressed with olive oil.

Pan Bagnat - Not just any sandwich, this speciality of Nice promises to delight, it is everything great about a salad Nicoise in a sandwich, the meaning of the name is literally “bathed bread" so its best to make ahead of eating to allow the oils and juices from the tuna to soak in! 

 

Petits Farcis Nicois - These little stuffed vegetables are a versatile dish, a light lunch, a starter or an accompaniment, the stuffing or 'Farce' in French is traditionally made with sausage meat.

 

Panisse - Creamy, crispy, chick pea fries, très magnifique.
